Food Allergies on a Komodo Trip: Confirm the Kitchen Before Booking
Plan food allergy communication for Labuan Bajo dining and remote boat trips with ingredient and cross-contact questions.

A food allergy on a Komodo trip needs a specific conversation with the person preparing the food. A promise to “leave out peanuts” or “make it gluten free” does not by itself show that ingredients, utensils and preparation surfaces can avoid cross-contact. Confirm the arrangement before paying for a boat trip that spends time away from town.
Send an actionable written request
State the exact allergen and any related ingredients your clinician has told you to avoid. Identify every traveller affected, the trip date, vessel and meals involved. Ask who will receive the instruction in the kitchen and who will confirm it back to you. FARE provides chef cards that can help communicate a food allergy to restaurant staff; a translated card is a conversation aid, not a kitchen guarantee.
| Ask the cook or manager | Decision the answer supports |
|---|---|
| Can you identify all ingredients in this exact dish and its sauces? | Whether the recipe contains the allergen. |
| How do you prevent cross-contact from shared equipment and surfaces? | Whether omitting an ingredient is sufficient. |
| Who prepares the meal and receives changes to the booking? | Whether the message survives a handoff between sales and crew. |
| What happens if an ingredient or substitute is unavailable? | Whether there is a credible alternative before departure. |

Restaurants and boat galleys need separate checks
In town, contact a restaurant outside its busiest service and ask to speak with the manager or cook. On a boat, obtain the answer for the named vessel and voyage; the booking desk may not be the person cooking. Ask when provisions are bought and whether the galley shares equipment across dishes. Do not assume a “special dietary requirements accepted” checkbox describes how that particular galley handles an allergy.

Use the answer to decide whether to travel
If staff cannot name ingredients or explain cross-contact controls, the uncertainty remains. Discuss personal emergency medication and travel planning with your treating clinician; this article does not diagnose an allergy or set a treatment plan. The purpose here is to surface the questions that a venue or operator must answer. Remote travel makes a last-minute menu change harder to resolve, so do not postpone this conversation until boarding.
Before selecting a komodo private charter, get the operator’s written answer about the actual cook, galley and provisioning. A private booking may allow planning flexibility but does not automatically make a shared kitchen allergen free.
Get a reply from the operating kitchen
Use FARE’s chef card to state the allergen in writing. For a boat, send it with the named vessel and trip date, request that the operator forwards it to the cook, and ask for a response about ingredients, shared utensils and substitute availability. Keep the dated reply. A sales acknowledgement alone is not proof that the cook can meet the requirement. If the kitchen cannot explain its controls, discuss your travel and emergency plan with your clinician.
Send the same allergy list to the selected Komodo liveaboards and the operator behind your Komodo tour packages before paying.
Separate an ingredient request from an allergy response plan
Give the operating kitchen a written, specific allergen list and ask about cross-contact, shared oil, utensils, storage and substitutions. A menu symbol or a general reply from a sales contact does not establish the galley’s controls. If the kitchen cannot meet the need, make that decision before an offshore departure.
Discuss your personal emergency plan and prescribed medication with your clinician before travel, and tell the operator what assistance and communication you may need. Indonesia’s Ministry of Health notes that severe food allergy can require urgent medical attention. Do not use a successful previous meal as a guarantee for the next preparation.
Does removing the visible ingredient make a meal safe for an allergy?
It may not address sauces or cross-contact. Obtain a specific kitchen response and follow the traveller’s clinician-led plan.
For the seriousness of severe food-allergy reactions, see Indonesia’s Ministry of Health explanation; obtain a personal response plan from your clinician.
